I have a project which I have been changing on oTree Studio over time, but have been also saving versions of on Github. I am now trying to make changes on an earlier version. Is it possible to load the code into oTree Studio so I can work on the earlier version of the project in oTree Studio? Or would I be better off just using my offline code editors?

oTree Studio doesn't have version control.
